The Winery
B\V Winery was founded in September 2012 with the goal of producing high-quality, single-varietal predicate wines from grapes ripened in Moravian vineyards. We give our wines the time they need at every stage of production, believing that only this approach can create the finest wines with long-term aging potential. Every wine we produce must first pass our own taste test before we offer it to you, our valued customers. Our flagship variety is the "royal" Riesling, and we also place great emphasis on red varieties. Our wines are highly rated in both domestic and international wine competitions.

Vineyards
Our vineyards, covering 83 hectares under direct cultivation control, are located in the vineyard tracks Hrubé pole and Náklo (Ratíškovice wine-growing village), Úlehle (Mutěnice), Moštěnsko (Hýsly), and U Sýpky (Milotice) in the Slovácko wine subregion. The soils consist of brown earth on clays and sands, brown earth on sprays and clays with a higher lime content, chernozem, and regiozem on fine sands and calcareous clays of the Pannonian, Bzenec, and Dubňany Formations. Their composition makes them suitable for growing both white and blue grape varieties. Thanks to the warm climate of the so-called "Moravian Sahara" with low rainfall, these vineyards provide ideal conditions for the proper ripening of late grape varieties within the Slovácko wine subregion. All vineyards are managed under an environmentally friendly integrated production system.

Winemaking Facilities
Our winemaking facilities are housed in the historic former castle granary in Milotice, dating back to the early 18th century. Here, we utilize modern technology for grape and must processing, as well as for final wine production. The unique cellar spaces, considered the oldest wine cellars in Milotice (built before 1759), now feature a modern tasting room—perfect for guided tastings and private events.

Grape Varieties
The white wine varieties include Riesling, Sylvaner, Grüner Veltliner, and Burgundy varieties. Our selection of aromatic wines features Gewürztraminer, Hibernal, Sauvignon Blanc, Moravian Muscat, Solaris, and the popular Müller-Thurgau. For red, rosé, and claret wines, we cultivate premium Pinot Noir, Blaufränkisch, Neronet, André, and Saint Laurent.
In recent years, we have focused on growing and producing wines that are less common in the Czech Republic, such as Kerner and Scheurebe—both Riesling hybrids. In the same vineyard, we have also planted another Riesling hybrid, a variety bred in Moravia: Aurelius.

Technology
Our winemaking process honors both modern trends and the historical expertise of our ancestors. By combining advanced winemaking technology with gentle grape processing, we create wines that uniquely express their origin and varietal character.
All our white wines undergo cryomaceration, a process that releases essential compounds shaping the wine’s future character, enhancing its fruitiness and freshness. For wines from exceptional terroirs, cold maceration intensifies minerality and highlights unique regional characteristics.
Additionally, we employ Sur lie (aging on fine lees) and Bâtonnage (stirring on lees), techniques that enhance the wines' aroma, body, and complexity. High-quality wines are further refined through aging in French oak barrels, enriching them with a balanced structure and a more rounded, full-bodied taste.

Our Wine Collections
We offer wines in three main collections: Standard Line, RESERVA, and RESERVA BARRIQUE. Despite its name, even our Standard Line receives exceptional care throughout production. Our wines are aged in stainless steel tanks or French oak barrels, where both white and red wines of exceptional quality are crafted. Some of our sparkling wines also originate from these barrels.
Still Wine Collections:
- Standard Line
Varietal quality predicate wines aged in stainless steel tanks to preserve primary aromas and freshness. Bottled in Bordeaux-style bottles. - RESERVA
Produced from the same grapes as the Standard Line but undergoes extended bâtonnage and aging in larger French oak barrels. Subject to strict selection criteria. Bottled in Burgundy-style bottles and released after several years, primarily for gastronomy and long-term aging.
- RESERVA BARRIQUE
Exclusively aged in toasted French oak barrels (225 liters). Bottled in Burgundy-style bottles with a velvet label. Subject to strict selection criteria and released after several years for gastronomy and long-term aging.
We also specialize in sparklign and semi-sparkling wines:
- Frizzante made from the same wines as the Standard Line, with a shorter bâtonnage process. Carbonated up to 2 bars of CO₂ pressure for a refreshing finish
- Charmat Sparkling wines are produced using secondary fermentation in tanks, following the method used for Prosecco. Wines undergo several months of bâtonnage before release. Charmat wines are aged for one year before market release.
In 2019, we expanded our portfolio to include the production of sparkling wines using the méthode traditionnelle. These sparkling wines are made through secondary fermentation in the bottle with remuage, aging on lees for up to 60 months. In addition to traditional Burgundy varieties, we also use other varieties, including our flagship Riesling.
Wine Shop & Enoteca
We aim to maintain a close connection with our customers by selling wines directly from our winery or via our e-shop. As we avoid selling our wines anonymously through large retail chains, only some of our Standard Line wines are available in selected wine shops.

In autumn 2022, we opened our first wine shop in the historic former castle granary in Milotice. This space features a modern Enomatic system, allowing visitors to taste 32 wines from our portfolio. In May 2023, we expanded with a new Enoteca, adding another 96 wines for self-service tasting using three additional Enomatic dispensers. In total, guests can explore up to 128 wine samples, representing the best of our winery. The Enomatic system is intuitive and enhances the tasting experience. Additionally, both our locations feature professional coffee machines, offering premium Italian coffee—the perfect companion to your wine journey.

Our Achievements
B\V Winery participates in international competitions, where our wines have received numerous prestigious awards. Not only our wines are recognized, but also our people. The chief enologist of B\V Winery, Jiří Toman, was awarded the title of Best Enologist of Still Wines at the Bacchus International Wine Competition in 2021. He received this honor again in 2023, further confirming his exceptional expertise. The Bacchus International Wine Competition, held under the patronage of OIV and VINOFED, is one of the most prestigious wine competitions in the world.
